Mother’s Day Luncheon
It is always a pleasure for me to entertain and cook for people. Cooking healthy food for friends, family and clients that is also beautiful and delicious is my passion. I absolutely love to do it, especially on an important day like Mother’s Day, and for my own mother and daughter.
This Mother’s Day, I wanted to make it special, but also simple and light. I incorporated some of the things I’ve been writing about recently, as well as some additional goodies into the meal.
For starters, I made baba ghanoush, a roasted eggplant dip with tahini (sesame butter), served with nut crackers, and also some quick pickles of cucumbers and ume vinegar garnished with wood sorrel and spider wort flowers. To wet our palates, I combined pineapple juice and ginger kombucha for a light and refreshing spritzer. The main course consisted of chicken curry salad, served on a bed of local red leaf lettuce, accompanied by red juicy tomatoes with sea salt, fresh ground black pepper, olive oil and fresh pineapple chunks.
Last (but certainly not of least importance), I baked brownies. Now, if I could do a better job than Pamela’s brand brownie mix, I would make them from scratch. These are the best brownies I have tasted, and they are also gluten free. Of course, I add my own touch to the mix by using coconut oil.
I hope that all of you mothers out there had a wonderful day, and shared good food with family or friends. Mothers make the world go round, and are quite often the person that teaches us what we know about cooking and food, passing down special recipes for generations.
TKG’s Mother’s Day Curry Chicken Salad
- 4 cups cooked chicken – use a combination of dark and light meat (free range, organic and preferably from a local farm)
- ¼ cup walnuts – raw, preferably, soaked and dehydrated or toasted
- ½ cup chopped celery
- Handful of dried cranberries- fruit juice sweetened
- 1 clove garlic, pressed
- Large spoonful Veganaise or natural mayo
- Drizzle of olive oil
- A sprinkle of ume vinegar
- 1 tsp curry powder
- Herbamare or sea salt to taste
Mix all ingredients together and season to taste. Chill until served.
